Play by ear significa fazer algo sem planejamento, improvisar. Exemplos:

“Let’s just see the weather there and play it by ear.” (Vamos ver como está o tempo lá e decidir.)

“In life, sometimes we have to play by ear.“ (Na vida, as vezes nós temos que improvisar.)
